Mashed Potato Bake
3 cups hot-cooked mashed potatoes
(Use 4 cups of raw, peeled, cubed potatoes, this will equal the 3 cups as needed)
1 cup sour cream
1/4 teaspoon garlic powder
1-1/3 cups French's Cheddar French Fried Onions, divided
( You can also use the Original French Fried Onions, in this recipe )
1 cup shredded cheddar cheese, divided
( I used extra sharp cheddar cheese )
Preheat oven to 350.
In a large bowl, combine the mashed potatoes, sour cream, and garlic powder; mix well.
Spoon half the mixture into a greased 2-1/2 quart casserole baking dish.
Sprinkle on 1/2 cup of shredded cheese, and 2/3 cup of French fried onions.
Top with the remaining potato mixture.
Bake (uncovered) in a 350 degree oven for 30 minutes.
Remove from oven, and top with the remaining cheese, (1/2 cup)
and the remaining French fried onions (1/2 cup).
Return to oven, and bake for an additional 5 minutes.
Makes 5 servings.
